Spicy Mayo Shrimp Boats 🍤🥒

Definitely going to make this a weekly occurrence 😋 These turned out sooo good and are SO simple to make!


Ingredients:

For the spicy mayo shrimp:

- 8-10 shrimp, raw (I'm using the frozen ones in the blue bag from Trader Joe's)

- 1 tbsp olive oil

- 1 tbsp minced garlic

- 2 tbsp mayonnaise

- 1 tsp sriracha

- 1/4 tsp soy sauce

- Optional: Sesame seeds for topping


For the rice:

- 1 bag frozen white rice

- 2 tsp rice vinegar

- 1/2 tsp honey

- 2 tbsp green onions


For the boats:

- 2 cucumbers


Instructions:

Add your olive oil to a pan on medium heat. Once warm, add in your minced garlic & cook the shrimp for 3-4 mins on each side *or until cooked all the way through. Set aside.


Make your spicy mayo: In a bowl, mix together mayonnaise, sriracha & soy sauce. Add your shrimps & coat well in the mixture.


Wash & cut your cucumbers in half, & scoop out the middle to create a small "boat".


Next, cook your white rice as usual. In a small whisking bowl, whisk together rice vinegar & honey. Pour over rice & add green onions. Mix well.


Assemble your boats! Add in your rice mixture & top with shrimp. Optional, top with sesame seeds for a little crunch!
