Skinny Burrito Bowl


The other day I was CRAVING Chipotle, BUT I'm trying to eat healthy(ish)- so I came up with this version of a burrito bowl! It is super quick and simple to make, and you can easily make extra to have for later or take to school/work for lunch the next day.

Lately I've been trying to cut back on eating meat, so I opted to go meatless. However, you can obviously add chicken, steak, shrimp, tofu or any other additional protein to this for more fuel if that's what floats your boat!


Here's the recipe:

1 cup quinoa/brown rice mix (cook according to package)

1/2 cup black beans

1/4 avocado

2 tablespoons salsa

1/8 cup shredded cheese

Salt + Pepper

Optional: Squeeze of lime

There's really not much to this recipe. I would say it's practically fool proof. Cook the quinoa and brown rice mix according to the package, heat the beans up in the microwave, slice up the avocado. Arrange all together in a bowl, top with salsa, cheese and lime if desired. Enjoy!
