Something magical happens when you combine ginger, soy sauce, honey and yellow mustard and I'll tell you what it is: It's DELICIOUS and soo simple.
Here's my recipe for my go-to simple marinade for chicken:
CHICKEN & MARINADE:
1 teaspoon honey
1 tablespoon yellow mustard
1/2 teaspoon ground ginger powder
1/8 cup soy sauce

Mix all the ingredients together and marinade your chicken. Place in a sealed container in the fridge for anywhere from 20 minutes to overnight.
Cook the chicken in a baking dish at 350 degrees for 45 minutes. I like to turn the chicken over at the halfway mark.
CUCUMBER SALAD:
1/2 large cucumber
1/2 cup shredded carrots
1/4 chopped green onion
I use a veggie spiralizer to make the cucumber "noodles", but you can also just chop up the cucumber how ever you like. I like the spiralizer because it gets rid of the water-y center of the cucumber. The firmer, outer part of the cucumber is what you want!
DRESSING:
2 tablespoons sesame oil
1/4 cup rice vinegar
Pinch of salt
Pinch of Red Chili Pepper Flakes
Sugar (optional)

Combine the ingredients and pour over salad, mix well.
YUM! This is a super easy recipe, and you can make all of it the day or night before. The longer the cucumber salad sits in the dressing, the better it tastes! It takes a while for the cucumber to absorb all of the dressing, so no need to worry about soggy salad since you aren't using lettuce.
